| Peeled Crawfish Tails | 2 pounds |
| Medium Red onion | 1 whole chopped |
| Green Bell Pepper | 1 whole, chopped |
| Stale bread | 4 slices |
| Large egg | 1 Beaten |
| Chopped parsley | 3 tablespoons |
| Chopped green onion tops | 3 tablespoons |
| Sea salt – to taste | Freshly ground |
| Black pepper – to taste | Freshly ground |
| Cayenne pepper – to taste | |
| Bread crumbs | 1-1/2 cups |
| Crawfish fat (See note below) | 2 tablespoons |
Directions –
- Grind crawfish tails, onions, bell pepper and bread slices in a food processor or grinder.
- Add crawfish fat, egg, parsley and green onion tops; mix thoroughly. Add salt, black pepper and cayenne and mix.
- Shape into balls the size of a walnut and roll in bread crumbs.
- Bake 20 minutes at 350 degrees.
NOTE:
These can be frozen after rolling in bread crumbs and baked without thawing. If crawfish fat is not available, simply omit it from the recipe.
